Mediterranean Tuna Tabbouleh
When you’re craving a healthy grain salad, try this wonderful tuna tabbouleh. Packed with protein from the yellowfin tuna and flavors of fresh herbs, this is definitely a go-to dish that will be on your regular rotation.

Ingredients
- ½ cup medium bulgur wheat
- ¼ cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon fine sea salt
- ½ teaspoon ground cumin
- ¼ teaspoon cayenne pepper
- 2 cups finely chopped fresh tomato
- 2 cups finely chopped seedless cucumber
- 1 bunch fresh parsley, stems trimmed off and finely chopped
- 1 bunch fresh cilantro, stems trimmed off and finely chopped
- 2 – 2.6 oz. packets Genova Yellowfin Tuna in Extra Virgin Olive Oil
Directions
- Bring a medium saucepan of water to a boil over high heat. Add the bulgur and turn off the heat. Let it sit for 10 minutes, then drain and transfer to a serving bowl.
- Add the olive oil, lemon juice, salt, cumin and cayenne to the bulgur and stir to blend. Add the tomato, cucumber, parsley, cilantro and Genova Yellowfin Tuna in Extra Virgin Olive Oil.
- Toss gently to combine and serve.
