Caprese Italian Pasta Salad
This is our take on a classic caprese salad but amped up with bowtie pasta and Genova Tuna. This seems more like an antipasti salad and would pair so well with a nice glass of chilled white wine.

Ingredients
- 2 cups dried whole wheat bowtie or Farfalle pasta
- ½ cup mozzarella balls
- ½ cup cherry tomatoes, cut in half
- ¼ cup chopped basil
- ¼ cup diced red onions
- 1 cup white cannellini beans
- 5 oz can Genova Yellowfin Tuna in Olive Oil
- ½ juice of lemon
- 1 tbsp balsamic vinegar
- 1-2 tbsp olive oil
- Salt & Pepper to taste
Directions
- In a pot with boiling water, add a little bit of salt and a dash of olive oil to keep everything from sticking. Then add 2 cups of dried bowtie or Farfalle pasta. Cook it just until its al dente – about 7-8 minutes. Drain it and let it cool completely.
- In a bowl, add mozzarella balls, cherry tomatoes, chopped basil, diced red onions, white cannellini beans, the cooked pasta, and Genova Tuna. Mix well.
- Season with balsamic, a drizzle of olive oil, salt and pepper to taste. Give a good toss and enjoy.
