Niçoise Inspired Salad
This is a Niçoise inspired salad and I love the various colors and vegetables in this salad. The final result is like a piece of art. The salad is light and refreshing yet still very substantial.

Ingredients
- 4-5 Red potatoes, cut into ½ inch thick slices
- 2 cups haricot verts
- 1 cup cherry tomatoes, cut in half
- ¼ cup Niçoise olives
- ¼ cup sliced red onions
- 5 oz. can Genova Yellowfin Tuna in Olive Oil
- 1 hard boiled egg
Dressing
- 1 tbsp chopped shallots
- 1 clove of garlic, minced
- 2 tsp of Dijon mustard
- 1 tbsp of honey
- ¼ tsp dried thyme
- 3 tsp of champagne vinegar
- 1/2 tsp kosher salt
- 1/2 cup of extra virgin olive oil
Directions
- Boil potatoes and haricot verts for 8-10 minutes until fork tender. Drain completely.
- To make dressing, combine shallots, garlic, dijon mustard, honey, thyme, champagne vinegar, and kosher salt. Mix well. While whisking vigorously, pour in olive oil to emulsify.
- In a large bowl, add red potatoes, haricot verts, cherry tomatoes, nicoise olives, red onions. Toss with dressing.
- To serve, add salad to large plate, add Genova Tuna on top or side, and a hard egg cut in half. Add fresh cracked pepper to taste. Enjoy!
